How to Prepare & Cook Silver Pomfret Fish:
Sambal Silver Pomfret Recipe
- fresh silver pomfret (450-550g or 650-750g per fish) from @vitaminseafoodsg
- 1/4 cup rice flour
- 1/4 cup corn starch
- Salt & Pepper
- Sambal Sauce (includes sambal belachan, lime juice, fish sauce and minced garlic)
Ingredients & Steps for making the Sambal Sauce
- Sambal belachan (you can use your favourite brand or make your own)
- 1 big lime juice
- 1-2 tbsp of fish sauce (to taste)
- 2-3 cloves of minced garlic
Mix the sambal sauce well and set aside. Once the fish is fried, serve the sambal sauce on top.
Steps to cook the Silver Pomfret
- Make sure the fish is patted completely dry (otherwise, it will splatter in the oil).
- Score the fish.
- Season the fish with Salt & Pepper
- Dredge in the mixture of rice and corn flour.
- Heat up the oil and fry for 3-5 mins on both sides till golden brown.
