What is Silver Pomfret?

Silver Pomfret Fish is a popular fish in Singapore that is often used in Chinese cooking. The silver pomfret is a species of carangidae family and is commonly found in the coastal waters of the Indo-West Pacific region.

 

In Singapore, silver pomfrets are usually steamed, pan-fried or deep-fried and served with ginger and spring onions. The silver pomfret is a delicate fish with a mild sweet taste and complemented by its fine texture. It is often confused with golden pomfret, which has different fins and a darker gold hue to its body.

How to Prepare & Cook Silver Pomfret Fish:

Sambal Silver Pomfret Recipe

Ingredients

  • fresh silver pomfret (450-550g or 650-750g per fish) from @vitaminseafoodsg
  • 1/4 cup rice flour
  • 1/4 cup corn starch
  • Salt & Pepper
  • Sambal Sauce (includes sambal belachan, lime juice, fish sauce and minced garlic)

 

Ingredients & Steps for making the Sambal Sauce

  • Sambal belachan (you can use your favourite brand or make your own)
  • 1 big lime juice
  • 1-2 tbsp of fish sauce (to taste)
  • 2-3 cloves of minced garlic

 

Mix the sambal sauce well and set aside. Once the fish is fried, serve the sambal sauce on top.

 

Steps to cook the Silver Pomfret

  1. Make sure the fish is patted completely dry (otherwise, it will splatter in the oil).
  2. Score the fish.
  3. Season the fish with Salt & Pepper
  4. Dredge in the mixture of rice and corn flour.
  5. Heat up the oil and fry for 3-5 mins on both sides till golden brown.
